Since opening in November 2012, Chris Whittaker’s Forage Restaurant on Robson has redefined Vancouver’s local, eco-forward dining scene by connecting diners to local fishers, foragers and farmers. Not only does Whittaker only work with local purveyors and subscribe to the most rigorous definitions of sustainable purchasing, but Forage is also a zero waste establishment – nothing leaving the restaurant ends up in a landfill.

What does that mean for you when working with Forage Catering? It means that not only will you serve your guests delicious, beautiful food, but they will feel good knowing that their carbon footprint got a little fainter while they enjoyed it.

Chef Chris Whittaker

Chris Whittaker’s philosophy is simple: respect our land and water. Use local suppliers: small farms and wild food. Nose-to-tail cooking. On premises baking and preserving. Use all resources wisely and – in the end - waste nothing. From being the driving force behind the uber-sustainable Forage and his newly opened (November 2015) Timber - to his unpretentious, adventurous food, Whittaker is one of Vancouver’s most interesting and passionate chefs.

The path to sustainability has been an easy one for Whittaker as conservation and the use of local products has driven him his entire life. Bee-keeping at home, preserving fruit and vegetables to have a “canless” kitchen, and working with small lot farmers throughout the year proves Chris takes this philosophy very seriously. As a recognized authority on sustainable purchasing and practices, he is a sought after speaker within the food service industry and beyond.

Whittaker is a past recipient of Vancouver Magazine’s Green Award and Where Magazine’s Green Table Network Award. Most recently he was inducted in the BC Restaurant & Food Service Association Hall of Fame. He is also a proud member of the Chefs’ Table Society.

Reducing energy and water consumption by 30% in both the kitchen and front of house, and maintaining Whittaker’s own food viewpoint of local and sustainable, Forage is a “restaurant of the future”.
